The Charcuterie Museum in Santa Margherita Staffora, where you can learn about the charcuterie tradition

A small museum created to preserve and hand down all the knowledge related to the production of an excellence of the Oltrepò Pavese: Salame di Varzi. Unique in its kind, the expression of an ancient world, the curious exhibition includes objects that have made the history of the world's most appreciated sausage.

Named after 'Davide Dedomenici 1909', the museum consists of three rooms in which a large part of the equipment used by the Casanova Staffora delicatessen since as far back as 1799 is collected. They range from traditional tools, pepper mills, salt mincers, knives and hammers used to prepare meat for salami, to bagging machines, meat mincers and antique scales.

The first room displays old documents, photos and posters, while the second houses a reconstruction of a 1930s-style shop. Finally, in the third room, you can admire the cellar with the cold cuts, tools and machinery used by the sausage makers.

A journey through the history and secrets of the charcuterie technique to learn about the craft and manual gestures of a craft that has its roots in the Longobard era.
