Territory and viticulture
The area of Oltrepò Pavese offers ideal climatic conditions for the cultivation of vines. The rolling hills, the altitude and the exposure to the sun favour a slow and complete ripening of the grapes, giving the red wines a complex structure and an unmistakable character. This is the land of Barbera, Croatina, Pinot Nero, Bonarda, Buttafuoco and Sangue di Giuda. The Consorzio Tutela Vini Oltrepò Pavese, (Consortium for the Protection of Wines of Oltrepò Pavese) is responsible for the protection of the area. Since 2012, the sector is also protected by the Oltrepò Pavese Quality Wine District
Organoleptic characteristics
The red wines of Oltrepò Pavese offer a wide range of aromas and flavours that reflect the characteristics of the territory and the traditional wine-making techniques. Barbera wines have an intense ruby red colour and complex aromas of ripe red fruits, spices and earthy notes. Croatina and Bonarda are also full-bodied wines with an intense colour and hints of black fruit and spices. Historically known as an ageing wine, Buttafuoco has an intense ruby red colour, a scent of redcurrant jam, perceptions of liquorice and spicy nuances.
Tradition and craftsmanship
The production of Oltrepò Pavese wines is deeply rooted in tradition and craftsmanship. Cultivation and vinification techniques have been handed down from generation to generation, keeping alive the ancient knowledge and love of the land. Many local producers still use traditional methods, such as fermentation in wooden barrels and long ageing in the cellar, to obtain wines of great structure and complexity. Food pairing
The red wines of Oltrepò Pavese are excellent accompaniments to a wide variety of local dishes, and not only. Their robust structure and complex aromas are perfect with meat dishes, both red and white. A Barbera, in its still or sparkling versions, could be the ideal accompaniment to grilled meats, tagliata or roast veal. Pinot Noir, with its elegance and freshness, goes well with mushroom dishes such as risotto or pasta with porcini. A glass of Bonarda is appreciated with first courses with meat sauces, agnolotti al brasato, mature cheeses, cured meats and red or spiced meats. Intense and penetrating, Buttafuoco is at its best with ravioli, spicy salami and game.
Sangue di Giuda, the red dessert wine
Sangue di Giuda, in its sparkling and sparkling versions, is the red dessert wine of Oltrepò Pavese. It is a fine, penetrating and intense wine. It is characterised by slight hints of jam and dried flowers, a sweet taste and a soft body. It can only be produced in a micro-area of the Oltrepò, characterised by clayey and calcareous soils, which give the wine particular organoleptic qualities. It is produced in the municipalities of Bosnasco, Montù Beccaria, Pietra de' Giorgi and Cigognola. It is excellent with piquant, non-creamy cheeses or jam-based desserts.
